egg-celent breakfast

Has anyone else realized how versatile and wonderful eggs are? One of my favorite breakfasts is simple scrambled eggs and toast. Give me a little bit of salt and pepper and a mug of hot tea and I am set for an amazing breakfast.

I think this love for eggs is leading me to learn to make eggs florentine or eggs Benedict. Maybe this weekend...I need to learn more about hollandaise sauce before I get to it.

  1. I made amazing eggs and sausage for me and Stewie yesterday!

    When I cook it just for myself:
    First I take 1/4 of a pound of mild Jimmy Dean breakfast sausage and brown it. Instead of draining it in a collander (I hope that's what it's called), I just fold some paper towels on a plate and throw the sausage on there while I cook the eggs.
    Then I take 2-3 eggs (depending on how hungry I am) and crack them all in a separate bowl and mix beat them with a fork. Then I pour about a tablespoon of milk in the bowl with them, a pinch of shredded cheddar cheese (or just tear a few little pieces off of cheese slices) and mix that in the bowl as well.
    Once I have it all mixed up, I pour the eggs in the skillet to scramble. Once they are ALMOST done to your liking, throw the sausage in there and finish scrambling them.
    Season with salt and pepper how you like.
    Sometimes I throw bits of bell pepper and onion in there.. when I'm not lazy. I just have the frozen bell pepper and onion bits in my freezer xD

  2. Lindsay, that sounds so good! I love eggs because you can pretty much add anything and they're still good! I'm even guilty of eating a bite of eggs with my buttered and jellied toast...its delicious! I'm.going to try cheese with my eggs next time. I don't know why I don't ever eat them with cheese....good idea!
